Carne Salada is a traditional cured meat from Trentino, the northernmost region of Italy. The product'S origins are very old and in the sixteenth century the product was widespread. Trentino is a border region and for centuries the bishop-princes required major duties to allow goods to transit. The duty on herds demanded the immediate slaughter of one animal every 5 and this was made available plenty of fresh bovine meat that had to be preserved. That was how Carne Salada was born. Initially the whole animal was preserved and the meat was used to make stews. Over the centuries the product evolved and refined and today it is produced only with the finest cuts of beef, and it is used for a variety of preparations, both cooked but mostly raw to make the famous Carpaccio.
