Extra Virgin Olive Oil obtained exclusively from olives of the Nocellara variety of Etna, coming from farms located along the slopes of Etna. The associated companies, in addition to possessing the certification of the variety, are followed and verified throughout the production phase until the time of the transfer to the Nostro Frantoio, where the olives are pressed within the day following the harvest. The processing takes place with a latest-generation Pieralisi plant, equipped with an innovative computerized system, which controls every phase of the process, with particular attention to processing temperatures that never exceed 27 °. This last element is essential for obtaining the "Cold Extract" certification. After extraction, the Extra Virgin Olive Oil is stored in steel silos under Argon, an inert gas for foodstuffs, which by eliminating oxygen prevents harmful oxidation, thus preserving the Qualitative and Healthy characteristics of a New Oil over time. .

This particular Oil is particularly suitable for use on fish-based dishes, mainly marinated, on both cooked and raw vegetables, on meat carpaccio and on all typical Mediterranean dishes.
