Short pasta originating from a sheet of dough cut into squares close to the centre. It reveals a delightful variety of texture between the thicker and juicer middle part compared to the thinner ends of the wings. With their cheerful and fanciful shape they fly from one recipe to the next, but in particular they are well suited to cold pasta salads along with all that imagination suggests: cherry tomatoes or other vegetables, basil, mint, capers, tuna, fresh cheese and so on and so forth.
