The Cetara anchovy sauce is an amber liquid obtained from the maturation of salted anchovies, according to an ancient procedure that respects simple but rigorous rules. The dripping of the anchovies comes from anchovies fished with the "cianciola", a boat specialized in bluefish fishing, between the end of March and the beginning of July.
